Fish Bones Grill is an anchor in redeveloping Bates Mill no. 6 of the Bates Mill Complex. Bringing Lewiston-Auburn an upscale alternative seafood restaurant offering healthy, seasonal choices in a comfortable, cozy atmosphere. Paul and Kate Landry, co-owners of Fish Bones, worked closely with Platz Associates to develop their unique restaurant concept. Seeking to offer unique food preparations and presentations, focusing on light grilling and roasting with naturally reduced sauces, they wanted a restaurant atmosphere that was warm and rich while accentuating their fun and flirty food creations.
An inviting bar lounge greets guests with comfortable seating and the soft glow of hand-blown stained glass lamps. The main dining area appointed with a modern-industrial theme, offers the deep patina of the stained concrete floors and the richness of the brick walls and columns contrasting wonderfully with the exposed ductwork and painted steel beams. An exposition kitchen anchors the dining area, infusing a sense of excitement and discovery to the dining experience. The walls and wood wainscot partitions emphatically divide the restaurant into several dining areas, each providing the opportunity for a unique dining experience. Platz Associates provided all architecture, engineering, and construction management services on this project.
